Dauphinoise Potatoes

Dauphinoise Potatoes
This is a very simple dish which works well every time. It’s my go to potato dish if we have guests. If you like cheese then you can add a cheese topping about 15 minutes before the potatoes are finished.

Ingredients

3 Cloves of Garlic
200ml Double Cream (you can use a mixture of milk and cream)
500g Potatoes (King Edward or Maris Piper are best)
Salt and Pepper to taste
1/2tsp Cinnamon
1tsp Freshly Grated Nutmeg
Butter for greasing the Baking Dish

Method

1.      Preheat the Oven to 1900C.
2.      Put the cream in a saucepan and crush the garlic into the cream.
3.      Bring the cream gently to the boil.
4.      Peel the potatoes and slice thinly in a food processor. Unless you’re a professional chef you won’t get the slices thin enough by hand.
5.      Add the potatoes to the cream and garlic mixture with the other ingredients.
6.      Cook for 5 minutes on the hob.
7.      Transfer the mixture to a very well-greased ceramic baking dish and place in the oven.

Cook until golden brown – about 45 minutes.
