Ingredients
700g chicken wings
75ml olive oil
75ml dark soy sauce
75ml sweet chilli sauce
1 tbsp honey
juice of 1 Lime
2 cloves of crushed garlic
50g finely chopped ginger
1 tsp (or more?) chilli powder (optional)
Method
1. Whisk all the ingredients together (except the chicken wings).
2. Place the chicken wings in a freezer bag and add enough of the mixture to coat the wings. Probably less than half of it and set the rest to one side.
3. Leave the wings in the fridge to marinade for a couple of hours (or overnight).
4. Preheat the oven to 200C.
5. Bake the wings in the oven for about 40 minutes, turning at least once.
6. About 10 minutes before the wings are ready, bring the remaining marinade to a gentle boil. Let it simmer for a few minutes, but keep stirring, or it will catch.
7. Add a teaspoon of plain flour, stir well, and cook for a further couple of minutes to thicken the sauce.
Serve the wings and the sauce separately so your guests can have as much or as little of the sauce as they like.
