Habas con jamón (Broad Beans with ham) |
I’m
not always that keen on Broad Beans, but now is the right time to be eating
them and this simple little recipe can be used as a starter for 2, or a light
lunch for 1. Double podding the beans is a nice touch for young beans and
essential for old beans.
Ingredients
250g shelled broad beans
olive oil
1 or 2 slices of bacon or
serrano type ham (chopped)
1 or 2 cloves of garlic
1 tbsp chopped parsley
salt & pepper
Method
1. Blanch the broad beans in boiling water until they
become tender.
2. Drain the beans and drop them into cold water.
3. When the beans can be handled, remove the bright green
bean from the outer husk.
4. Warm the oil in the pan and fry the bacon or ham and
garlic for a couple of minutes.
5. Stir in the parsley and beans and fry for a few more
minutes.
6. Season to taste.
